CUT OUT COOKIE

Here's another valentine's day post. Its my all time favourite simple cut out cookie. Its pretty straight forward really.

Put shitloadda cookie in a box and it will be like a heart attack. geddit. hahahaaha.

Since you want to retain its cut out shape, the butter and flour ratio has to be almost equal. Plus an extra yolk in the batter further tenderises it. Also do take note during mixing to not incoporate to much air as this is a flat cookie. By incoporating too much air, it may cause uneven surface which wouldnt be too pretty.

Oh oh, it is much easier to roll the dough out in between sheets of baking paper. I find it extremely therapuetic to roll dough out and bake and ice them. Its sucha soothing process, ya feel?

CUT OUT COOKIES

6oz of butter

3/4 cup sugar

1 teaspoon vanilla essence

2 1/2 cups plain flour

1 egg

1 egg yolk

steps:

  • preheat oven to 170degC

  • cream butter and sugar till just incoporated

  • add egg and vanilla

  • add flour and mix till dough comes together

  • divide dough into two and shape into flat discs

  • wrap in clingfilm and refrigerate at least 30 mins

  • roll it out to 0.5-0.7cm thickness

  • cut into desired shape

  • bake 20 mins

  • let cool and frost it!

COOKIE ICING

2 cups icing sugar

1 tablespoon wilton's meringue powder (substitute with 1/2 egg white)

few tablespoon warm water

few drops of desired colouring

steps:

evenly mix icing sugar and meringue powder

add water in one tablespoon at a time till desired consistency

add coloring

*I usually make it stiffer to add the outline of the shape and then add more water to thin it out afters and fill the outline up
