Since valentine's day is approaching, I thought this would be a timely post for those of you who needs inspiration for homemade gifts. Personally, I've always liked making gifts that opens up small messages/surprises. And what better way to do so with an edible carrier.
A fortune cookie has an undeniably crunchy snap. Unlike usual biscuits, it doesnt flake off and makes a mess with tiny crumbs. It usually has a clean break when you apply just enough force to break it apart. This is because there is minimal fat in the composition hence it does not have any tender/flaky texture.
The ingredients list reminds me of a macaroon recipe, but the way of making it is completely different. This cookie doesnt require much air in it or preferably none actually - to give you the even flat surface.
do up the little slips of notes first
its important that its a perfect circle, otherwise it would fold even so dont skip this part!
Spread it evenly to prevent tearing during folding
its sooo much easier to fold down the middle with the mouth of a mug

Everything about this recipe is simple and straightforward. Until it comes to folding the hot, hot, oh so hot cookies. And you cant treat them like hot potatoes and toss it everywhere. You gotta be steady, fold and fold and leave it to cool. When its just out of the oven, its soo pliable and when its cooled, it magically becomes hard. So work fast!
FORTUNE COOKIES (yields 20 cookies)
2 egg whites
1/2 teaspoon vanilla essence
1/2 teaspoon almond essence
few drops of colouring of your choice
3 tablespoons oil
8 tablespoons flour
6 tablespoons sugar
1 1/2 teaspoon cornflour
3 teaspoons water
write little slips of messages to put into cookie
prep baking sheets, draw 4 inch circles on one side of the paper and flip over
preheat oven 180degC
beat whites till frothy - medium peaks
add flavours, colour and oil
mix in dry ingredients
add in water last
spoon 2 teaspoons of batter into each circle and spread evenly
bake for 10mins till sides are starting to brown
take it out of the oven and immediately start folding!
put note on the middle of cookie and fold into a half moon shape then taking a mug, fold down the middle to form the signature fortune cookie shape.
put folded cookie into a muffin pan to stay in shape while cooling
